And I think to myself, what a wonderful world...
I hate to admit that once again I failed to keep up with my blogging, but it is for good reason, I promise.
Life has thrown several adventures my way in the past month and I couldn't be more grateful for each one. I don't have much time to go into detail now, but I wanted to post a few pictures and give a quick update. I had an unexpected week off work at the gallery in Durango in late May and took full advantage of it by making a trip to Atlanta to see my brother for a few days as well as stopping through Boulder to visit my dentist and to stop by to see my lovely ladies at Art&Soul. Little did I know that I was opening the door to some big life changes.
I am moving back to Boulder to work at Art&Soul Gallery at the end of the month. It is exactly what I was hoping would come my way, even without actually realizing it. I couldn't be happier to be around amazing women who I look up to and have learned so much from and work in a fast paced, inspiring environment. It's an opportunity that I can't pass up and will benefit my future in the jewelry industry tremendously.
Since deciding to accept the position in Boulder, I have been trying to soak in every moment of my favorite season in my beautiful mountain town. Here are a few pictures from the hike I take every morning. The picture at the beginning on this post is from the river trail that I walk to work on every day, couldn't ask for a better commute, right?
I forgot to mention that my brother made the long trip cross country last week to drop off his pup, Bella, who is Layla's sister for a month while he travels for business and pleasure. Here are the two wild ones, love them!
I promise to post pictures from my trip to Atlanta and more details about the upcoming changes in my life soon.

Still wishing I had more time to blog and bake and cook, but soon I will be finishing up all my jobs and down to just two! I just wanted to share a new favorite quote I stubbled upon and think it is great advice for any women, young or old. Also, I wanted to share with you a picture of my beautiful bouquet that I got for "Un-Mother's Day", similar to "un-birthdays" of Alice and Wonderland. I love each of the flowers and they are so fragrant and vibrant, especially the freesia and lilies. I am one lucky girl!

When you know that you just don't know
I can't explain exactly why I felt the need to put all the lyrics for one of my favorite songs of all time by the great Damien Rice in this post, but it was just necessary. To me, this song perfectly exemplifies contrast and yearning for something more or different. I spent the last nine months learning so much about myself, through the ups and downs that life has thrown at me. It has been an rocky journey, but I feel that I have gained so much ground in terms of understanding what I want in life.
I had no idea just how empty my life would feel without jewelry, art, and constant communication with clients until I spent a few months away from the gallery life after leaving my position at Art + Soul Gallery in Boulder last June. Without all of that in my daily life, the contrast showed me how important every aspect of this industry was to who I am as a person and what drives me.
I could not be happier to be back in the industry. I love my new position at Diane West Jewelry & Art in downtown Durango. I love learning all of the intriguing bits of information about each of the different artists that we feature at the gallery. I love working with clients to help them appreciate the art and jewelry and find the perfect match for what captivates their interest.
The hardest part of the past few weeks of starting my new position is tying up all of the loose ends at my other jobs though. I have had to fit in training for my old bookkeeping position, as well as my residential cleaning business on top of my training at the gallery. Fortunately, the gallery thing came back to me like riding a bike, so my training there was enjoyable rather than stressful. The only overwhelming part of it has been working six day work weeks back-to-back. I can't complain though, because I am finally back in the industry that I constantly feel drawn to.
So my blogging about cooking and baking has unfortunately taken a back seat as I try to balance all of the other aspects of my life during this time of transition. I have been forcing myself to get out and walk my best life companion, Layla, for at least 30 minutes twice a day to enjoy the long awaited warmer weather and blooming tulips and daffodils of spring. I have also been doing yoga every day to get back to a more balanced and complete lifestyle. I have to say, I am loving feeling sore when I wake up every morning and completely exhausted when I crawl into bed every night!
I plan to post a few recipes in the very near future, especially my recipe for homemade greek yogurt which I make on a weekly basis, but have failed to blog about thus far! So until then, hope you are taking some time to enjoy the clarity that contrast can bring to life!

Finally Back in a Gallery

I officially started my new position at Diane West Gallery in Durango, Colorado and couldn't be happier. Diane is an amazing jewelry artist, not to mention she has incredible taste that shows well in her gallery that features other jewelry artists and two dimensional work on main street. The jewelry ranges from semi precious stones like the blue chalcedony cabochon ring set in sterling silver shown above, done by Diane herself, to other big names in the industry like Jeff and Susan Wise and Bella Donna Designs, shown below.
To reaffirm that the gallery and jewelry industry is one of my true callings, I sold a painting by local artist Tess Jordan on my first day. It always feels good to make a sale, but it feels even better when you were only introduced to their work two hours beforehand.
Despite having the worst case of allergies I've had in years, if not ever, my first day at the gallery was informative, exciting, and I came home feeling like everything really does happen for a reason! I love my new job, am excited to be staying in my gorgeous hometown of Durango for a summer, and ready to see what new adventures life brings my way.

A Feast Bursting with Color and Flavor

As I mentioned in my previous post, I cooked up quite the feast last Friday night and I wanted to share some pictures and recipes with you all from it! This particular feast consisted of Rosemary Lemon Roasted Chicken, Roasted Beet Salad, Wild Rice, and Sauteed Asparagus. Everything was so delicious and the meal was a lot of fun to create! So here it goes...onto the recipes!
Rosemary Lemon Roasted Chicken
2 T Olive Oil
3 Sprigs of Fresh Rosemary
3 Small Lemons
1 T Oregano
3 Bay Leaves
1 T Course Salt
1 T Freshly Ground Pepper
4-5lb Whole Chicken
Preheat oven to 350 Degrees F (on convection mode if available).
Coarsely chop two sprigs of rosemary and place into a bowl. Add the juice of one lemon, the oregano (I used dried, but coarsely chopped fresh oregano would be ideal), salt, pepper, and olive oil to the bowl. Mix ingredients until they are well combined.
Place your chicken in a large roasting dish. Use your fingers to separate the skin from the meat of the chicken. Place the mixture of herbs, salt, pepper, lemon juice, and olive juice under the skin of the chicken with your hands or another utensil you see fit for the job.
Cut the remaining two lemons in half and place them inside the chicken. Add the last sprig of rosemary and bay leaves.
Roast in the oven for about an hour and a half or until golden brown and cooked thoroughly.
Roasted Beet Salad with Pancetta, Feta, Mint, and Arugula
6 Large Beets
3 T Olive Oil
12 oz Feta Cheese
1/2 Mint (Approximately 2/3 oz package)
2 Small Lemons
4 oz Arugula
16 oz pancetta (sliced about 1/8" thick)
Preheat the oven to 350 Degrees F (Convection mode if possible)
Cut the ends off the beets. Cover them with a light coating of olive oil and place them in oven safe dish. Roast them in the oven 45-60 minutes until they feel tender with a fork. Remove from oven and let cool.
While the beets are roasting, chop feta into small cubes if you purchased it in block form. At my local health food store, crumbled feta cost nearly double what the block style cost. I decided it wasn't that difficult to chop it myself and opted to save the $5. Coarsely chop a 1/2 C of fresh mint and set aside. Wash and dry arugula and place it in a large serving bowl. I chose a glass serving bowl, because all of the ingredients are so vibrantly colored, but use whatever you have available. Cut the lemons into wedges and set aside.
Cook all of the sliced pancetta in a large skillet on medium heat until crispy. Pour off the excess grease into a small dish to use with sauteed asparagus if you are cooking that as well. Let cool and chop into bite sized pieces and set aside.
Once the roasted beets are cool enough to touch, peel the outer skin off them with your hands if possible or with a knife. Dice the beets into approximately 1" cubes and place them on top of the arugula in the serving bowl. Next, add the cooked pancetta. Add the chopped feta and then top it with the chopped fresh mint. Drizzle the salad with 1 to 2 T of olive oil depending on how much dressing you prefer to add to a salad. Lightly toss the salad. Place the lemon wedges around the serving bowl or on the plates for guests to squeeze over the salad for some tang. Serve and enjoy! Yields 8-12 servings depending on portion size.
Wild Rice with Dried Cranberries and Toasted Almonds
2 C Wild Rice
2 T Butter
8 oz Water
1/4 C Dried Cranberries
1/4 C Sliced Almonds
Rinse the rice thoroughly and let dry in a strainer. In a large pot on medium heat, add the 2 T butter and let it lightly brown. Add in the 2 C of wild rice and mix until the butter evenly coats the rice. Add in the 8 oz water and cover. Keep it at a slow boil for an hour or until the grains of rice pop out. While the rice is cooking, chop the 1/4 C dried cranberries and set aside. Lightly toast the 1/4 C sliced almonds in a 350 degree F oven for about 6 minutes. Keep an eye on them though, because they tend to get too toasted faster than you might expect. Once all the moisture has cooked off the rice and it is the texture you prefer, place it into a serving dish. Add the dried cranberries and lightly mix together. Top the dish with the toasted almonds. Serve and enjoy! Yields approximately 8-12 servings depending on portion size.
Sauteed Asparagus with Maple Dijon Glaze
2 bunches Asparagus
2 T Maple Syrup
2 T Dijon Mustard
2 T Pancetta Drippings
Using the same pan (without cleaning) that the pancetta was cooked in, saute the asparagus on medium heat. Add a small amount of water and a lid to lightly steam the asparagus if necessary. Combine the maple syrup, dijon mustard, and pancetta drippings in a small bowl. Once the asparagus is tender and lightly browned if desired, then turn down the heat to low. Next, add the maple mustard mixture to the cooked asparagus and let simmer until the asparagus is just lightly coated. Remove from heat and place on a serving dish. Serves about 8 people depending on portion size. Enjoy!

I'm excited to report that my Canon Powershot S95 camera is working again and I have pictures to share of my artwork and jewelry purchases from Santa Fe! So I'm going to keep this short and sweet, because I have a farmer's market to visit this morning to get some fresh greens and eggs. Power of Passion

Everything about my trip was absolutely amazing. I know that I appreciate all the Santa Fe has to offer much more than ever before based on my art/jewelry background. From the flea market, to the farmer's market, to the Plaza, and to all the galleries on Canyon Road, I just couldn't get enough! I bought my first three pieces of fine art from an artist named Raya, who is one of the most talented painters I have ever seen. She does everything from landscape, to abstract, to layering paper to create beautiful designs. She is extremely talented in a variety of mediums, which is really quite rare for an artist. She was so sweet and I loved her energy almost as much as her work. She was so touched that I chose to purchase her work for my first pieces of fine art to have for my own. It is interesting to me that after working with so much wonderful art and never being compelled to actually own any of it, I saw these three pieces and knew they had to go home with me! I promise to post pictures of them soon, but as I mentioned before, I am having issues with my new Canon Powershot S95 and it is yet again at the repair shop.
The adobe architecture, the rolling hills dotted with shrubs, and the heavily forested mountains around Santa Fe make it a site to see, no doubt! Every house is a similar reddish sandy color to the ones around it, but it is unique based on the color of trim the owner chose around their windows and the color they painted their front door. Most of the homes have these really neat walled in courtyards that are adorned with amazing wooden gates or rod iron elements. Everything about the city feels substantial, cozy and inviting. Even the huge homes in town seem understated yet spectacular as a result of the style of architecture. I love the idea of having a casita, or small back house to use a studio or for guests when they visit, as well. Here are some images I borrowed to exemplify the Santa Fe style.
The jewelry in Santa Fe in also amazing, especially now that I have developed a taste for unique, exquisite pieces that allow one to be mesmerized time and time again. The image I posted at the beginning of this post is a style of rings from a German company named Niessing that I saw in Santa Fe. They do an incredible job of creating pieces that are eye catching, classic, and contemporary. They use an assortment of tones of gold that are not normally seen in the industry, such as grey gold. They do tension set engagement rings that are truly pieces of art and design, see the image below. I love their use of brushed and polished metals, gorgeous diamonds colored anywhere from clear to sherry, and intriguing design elements. If you are ever in Santa Fe, I would highly recommend a visit to Eidos Contemporary Jewelry in the Sanbusco Market near the Railyard. Another place that really caught my eye was called Sequoia in downtown Santa Fe. The company used reclaimed wood to create marvelous furniture. Check out these images below of some of their amazing designs. After visiting their store, I have to say that I am seriously considering saving up for one of their bedroom sets! Okay, enough about how much I loved Santa Fe! Don't be surprised if you find me residing there in the near future though! If you ever find yourself near Santa Fe, go see all that the city has to offer for a few days. If you appreciate design, art, or jewelry, I promise that you won't be disappointed!
I'm sorry to report that I haven't been baking nearly as much as I would like to be, but I promise to post some recipes and actually take pictures of them during each stage soon! I have tried out several new recipes for salads and soups and will be putting those up again in the next few weeks, so check back!
